Thanks to my former college roommate, Jackie (yup, the credit goes to you, Jax!) I was roped into this whole tradition. Start a “Pumpkin Chili Baked Inside a Real Pumpkin” Tradition on Halloween. Turns out, it’s the perfect thing to spoon and cradle in your hands on a crisp autumn day.
It’s a holiday recipe inspired by my old roommate, Jacki (Told you, Jackie, I wouldn’t forget!). Here are some tips for making your own!
- The best size pumpkin to carve is medium-sized, ripe and with character (dimples, curves, freckles, imperfections all welcome!)
- The recipe calls for stuffed with ground chorizo, roasted pumpkin seeds, and tons of veggies and spices.
- You bake in the oven for about four hours, and devour later for about four hours 🙂
